Saint Barbara’s Day

Well, I didn’t bake Kletzenbrot, but I did bake Silesian pepper cookies:

Combine over medium heat, and stir until the butter melts:
1 1/2 cups honey
1 cup sugar
2 tbsp butter
Let cool.

In a large bowl, combine:
4 cups flour
1 tbsp baking powder
1 2/3 cups almonds, chopped small (I used hazelnuts, because I didn’t have any almonds)
1/2 tsp cinnamon
1 tsp ground cardamom
a pinch of ground cloves
a pinch of ground pepper

Add and mix well:
1 egg

When the honey mixture has cooled, beat it into the flour mixture. Add enough flour (up to 1 more cup) so that the dough comes away from the side of the bowl. Roll out on a floured surface and cut into shapes with cookie cutters.

Bake on a greased cookie sheet at 350 deg F for 15 minutes.
