Easy Grilled Chicken Sandwich
- One 8 or 9 inch focaccia (supermarket)
- One rotisserie chicken (supermarket)
- One large onion, sliced and sautéed in a little olive oil
- Two tomatoes, sliced
- One cup grated provolone cheese
Slice the focaccia horizontally like a cake. Pull all the meat off the chicken and chop coarsely. On the bottom layer of the focaccia, layer the chicken, the sautéed onions, the sliced tomatoes, and the grated cheese. Cover with the top layer of focaccia.
Preheat a heavy cast iron skillet or griddle. Put the sandwich on the skillet and weight it with something (ideally another large cast iron skillet). Heat for five minutes, then flip (carefully!) onto the other side and heat for another five minutes. Remove the sandwich from the heat, let it sit for a few minutes, and slice it into six pieces like a pizza. Feeds 4-6.
Note: the focaccia sold in grocery stores is generally very oily, so I don’t oil the skillet and I don’t add any mayonaise or other dressing inside the sandwich.
